I've looking at digital photo images sizes, there seems to be a lot of variation. I've settled on 1680x1200 is this acceptable? I'd prefer 1600x1000 would that be acceptable?

Do you mean aspect ratio or image size? They are not the same. If you like 1680x1200  that is fine, but that would be a very "small" printed photo. A printed 8x10 photo = 2400x3000.
