Title: Canyon stratifications without strata plugins (terragen 0.9.43)

How can I proceed to create canyon stratifications without strata plugin, only with min and max surface altitude?

Make a really terraced, eroded terrain in World Machine or some other terrain generator, then use the slope and height constraints for each surface layer in Terragen to distribute the layers where you want them...

I use real arizona's dem... ;) I've some trouble to use slope. I can't set meters in correct way. Stratifications not seem real.

I guess you gave the answer yourself... with surface altitude constraints.
But it does take A LOT of work getting it right, so I'd stay with the stratagen.

If you don't want to use the Strata plug-in your only option is to stack 10-100's (!) of layers of different color(and bump) with the most sharp altitude constraint (Slider to the very left). You also should use "Fractal noise" with the lowest value (Slider to the very left) besides playing with the "Scale depth" settings
Even if you work with real Arizona DEMs setting the height shouldn't be a problem: Hover with the mouse pointer over the terrain and look at the Z-value (at the bottom of the "Landscape View/Sculpt" window) for that part of the terrain.
