Any preliminary tutorials on the settings for Focal Length and Aperture? How do you set this up to corespond to the settings of an actual camera?

Really this is just an alternative way of controlling the angle of field of view. Focal length and aperture (film back) settings don't actually do anything more than calculate the angle for you, but if you know what focal length you want to emulate and you know the aperture settings for the camera you want to emulate, you can enter those. The default aperture of 36mm x 24mm should emulate a typical 35mm camera pretty closely, so if you have some idea what focal length lens you want, you can just enter that.
The aspect ratio of the final image depends on the aspect ratio in the render settings, not the aperture width/height in the camera. Because of this discrepancy, in the camera settings you choose whether you want the renderer to lock to the camera's horizontal field of view or its vertical field of view.
