Outside of the Notes Node, is there any place where more documentation may be placed relating to the project?

Like being able to attach a txt or doc file.

Click Project Settings and you can use the Comments Section. I don't know if there's a limit, though there is a practical one since it's not the greatest view for dealing with large amounts of text.
