How do I manage this problem so I can see the entire rock in the rendered image???

I think the heightfield maybe cutting the rock in two. Try disabling the heightfield.

You could try inreasing displacement tolerance.

I agree with j meyer, this looks like a displacement tolerance issue. In the Planet node increase Displacement tolerance to 2. If that helps but doesn't totally resolve it, try higher numbers (in small increments).
