How can I give this terrain more definition, more bumpiness, make it look more rough...its too smooth for my liking....

Try adding some very small fake stones or a power fractal with a low lead-in scale, a miniscule smallest scale, and small displacement. All of those "small" references are relative to the terrain size, of course

wow, now, I often lower the gama a bit in my shots, but that's a bit excessive isn't it?
You could try the redirect shader (for adding detail to the vertical walls) with some small power fractals.
